Carrot, Ginger, & Orange Dressing

A homemade Asian-inspired carrot, ginger and orange dressing made with pureed carrots, tangy ginger and freshly-squeezed orange juice! Pour over greens for a super healthy salad filled with immune boosting and detoxifying ingredients.
Here's a salad dressing that's citrusy, filling and so delicious! The combination of carrots, ginger and orange was first discovered when my husband and I ordered a house salad at our favorite sushi spot in Palo Alto, Ca. Every time we go back, we look forward to the salad as much as the sushi! The dressing is the real showstopper—thick, hearty and sweet.
Eventually I asked the waitress about the ingredients so we could make it ourselves, but the only hints I got were "vinegar and carrots". So into the kitchen I went and combined Asian flavors of toasted sesame oil, carrots, sweet orange and tangy ginger. It took us a couple more sushi runs to compare before the the recipe was perfected, but hey, who's complaining?

Now we can order-in sushi and make the salad ourselves (and so can you!).Besides being super easy to make, these ingredients pack any salad with tons of micronutrients and vitamins:
Oranges
Vitamin C from the fresh orange juice gives your body an immunity boost. When you're feeling a little under the weather or feel like a detox salad, this dressing does more for you than any other vinaigrette. Oranges are also alkalizing to the body, making them perfect for detox!
Carrots
High in vitamin A and beta-carotene, eating carrots are not only healthy for your insides, but are also wonderful for your skin. These powerful antioxidants protect your cells from damage and will make your skin glow!
Ginger

Once all the ingredients are blended and pureed, spoon and pour it over salad greens, tomatoes and cucumber for a simple salad. Naturally, this colorful dressing makes a perfect side for sushi! Thick, juicy and chunky, it's got a nice sweet citrus taste. Add this simple dressing to your menu for something totally new.

Ingredients
2 carrots, large (or 5 smaller carrots) 2 inches of ginger 2 oranges, juiced 3 tbs sesame oil 2 tbs coconut aminos 3 tbs rice vinegar 2 tbs olive oil
Recipe Steps
Chop peeled carrots and ginger, and juice the oranges. Add ingredients to food processor.
Measure the rest of listed ingredients in food processor and blend until pureed. Dressing will remain chunky, but there shouldn't be large pieces.
Pour over salad, and store remaining dressing up to 5 days in the fridge.
